Ingredient:
8 best end lamb chops, well-trimmed
Mint glaze
3 tbsp dry white wine
1 tbsp white wine vinegar
4 mint sprigs, leaves stripped and chopped
1 tbsp clear honey
1 tsp Dijon mustard
Salt and black pepper
Method:
Make the mint glaze: combine the wine, vinegar, mint, honey, and mustard, and season with salt and pepper. Brush the glaze over the chops, and leave to marinate for about 30 minutes.
Place the chops over a barbecue or under a hot grill, 7 cm (3 in) from the heat, and cook, brushing often with the glaze, for 4-6 minutes on each side, until done to your liking.
Lamb with Orange Glaze
Instead of the mint glaze, combine 3 tbsp orange juice with 1 tbsp each white wine vinegar, orange marmalade, and chopped fresh thyme, and 1 tsp Dijon mustard. Season with salt and pepper.
