Ingredient:
500 g (1 lb) pasta bows
Salt and black pepper
1 red pepper, halved, deseeded, and diced
1 green pepper, halve, deseeded, and diced
1 carrot, chopped
3 spring onions, sliced diagonally
4 tbsp mayonnaise
Spring onion tops, sliced, to garnish
Method:
Cook the pasta bows in a large saucepan of boiling salted water for 8-10 minutes until just tender.
Drain, rinse under cold running water, and drain again. Leave to cool.
Put the pasta, peppers, and onions into a salad bowl, and season with salt and pepper. Add the mayonnaise, stir well to coat all the ingredients evenly, then chill for 30 minutes. Garnish with spring onions before serving.
Pasta salad with mangetout and sesame seeds
Substitute 125 g (4 oz) blanched mangetout for the red and green peppers. Omit the mayonnaise. Mix together 2 tbsp white wine vinegar, 1 tbsp sunflower oil, and 1 tsp sesame oil, and pour over the salad. Taste for seasoning. Substitute 2 tbsp toasted sesame seeds for the spring onion garnish, and serve at once.
