Ingredient:
90 g (3 oz) butter, plus extra for greasing
1 large onion, sliced
1 kg (2 lb) floury potatoes, thickly sliced
Salt and black pepper
Chopped parsley, to garnish
Method:
Lightly butter a gratin dish. Melt the butter in a frying pan, add the onion, and cook gently, stirring occasionally, for 3-5 minutes until the onions are softened but not coloured.
Layer the potatoes and onion in the gratin dish, seasoning each layer with salt and pepper, and finishing with a neat layer of potatoes.
Pour any butter left in the frying pan over the potatoes. Bake in a preheated oven at 190 ℃ (170℃ fan, Gas 5) for 1-1 ½ hours until the potatoes are tender. Garnish with parsley, and serve hot.
