Ingredient:
1 small head of radicchio
1 small oak leaf lettuce
1 small lollo rosso lettuce
1 small red onion, thinly sliced
125 g (4 oz) seedless red grapes
Dressing:
150 ml (1/4 pint) olive oil
3 tbsp balsamic vinegar
1 garlic clove, crushed (optional)
½ tsp caster sugar, or to taste
Salt and black pepper
Method:
Tear the radicchio leaves and the oak leaf and lollo rosso lettuce leaves into bit-sized pieces. Put them into a large salad bowl and mix together, then add the onion and grapes.
Make the dressing: combine the oil, vinegar, and garlic, if using, with sugar, salt and pepper to taste.
Pour just enough dressing over the salad to cling to the leaves, toss gently, and serve at once.
