Onion Tarts with Goat s Cheese

Ingredient:
For the pastry
2 cups plain flour 
8 tbsp butter 
1 cup grated goat s cheddar or Cheddar cheese

For the filling
2 tbsp olive or sunflower oil 
4 onions, finely sliced
180 g young goat’s cheese
2 eggs, beaten
1 ½ tbsp single cream
¼ cup grated goats cheddar
1 ½ tbsp chopped fresh tarragon
Slat and freshly ground black pepper

Method:
To make he pastry, sift the flour into a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the grated cheese and add enough cold water to make a dough. Knead lightly, put in a plastic bag and chill. Preheat the oven.

Roll out the dough on a lightly floured surface, and then cut into eight rounds using a 11.5 cm pastry cutter, and line eight 4 in patty tins prick the bases and bake in the oven for 15 minutes until firm but not browned. Reduce the oven temperature to 180c/350f/gas 4. 

Heat the olive or sunflower oil in large frying pan and fry the onions over a low heat for 25 minutes until they are a deep golden brown. Stir occasionally to prevent burning. 

Beat the goats cheese with the eggs, cram, goats cheddar and tarragon. Season with salt and pepper and then stir in the fried onions.

Pour the mixture into the part baked pastry cases and bake in the oven for 25 minutes until golden. Serve warm or cold with a green salad.
