Ingredient:
750 g (1 ½ lb) ripe but firm tomatoes, thinly sliced
1 mild onion, cut into thin rings
1 tbsp snipped fresh, chives
Dressing:
90 ml (fl oz) extra virgin olive oil
2 tbsp red wine vinegar
¼ tsp caster sugar
Salt and black pepper
Method:
Overlap the tomato slices in circles of diminishing size in a large shallow dish. Arrange the onion rings on top.
Make the dressing: combine the olive oil, red wine vinegar, and caster sugar, and add salt and pepper to taste.
Spoon the dressing over the tomatoes and onions, cover, and leave to chill for about 2 hours. Sprinkle with the snipped chives before serving.
